I don't have any eggs, and I usually use soy milk instead of the moo variety. Can one make French toast sans oefs?

Yep. The "Fronch" toast in Vegan with a Vengeance is awesome, and uses things like chickpea flour, but you can also make it with mashed banana and soymilk, which I do more often, because I lent out the VwaV book and don't have it handy.
